James Campbell cooking tips:
Take your fillets out of the fridge two hours and leave at room temperature before cooking. This will relax the meat and we suggest marinating with a blend of oil, butter, salt, pepper, herbs and garlic. When you are ready cook, seal each side of the steak quickly, getting the perfect sear by having your pan as hot as possible. Turn the heat down and once cooked to your liking, let your steak rest and serve with your favourite side dishes.
